3 easy recipes for a protein-rich Easter brunch

Our highlight after egg hunting? The yummy Easter brunch. We’ve put together 3 delicious and fitness-friendly recipes to sweeten up your Easter feast.

Chocolate Protein Porridge 

Spice up the breakfast classic with chocolate flavor and an extra serving of protein! Here’s how:

Ingredients: 

  • 40 g rolled oats 
  • 15 g vegan chocolate protein powder (alternatively, more rolled oats) 
  • 1 tsp chia seeds 
  • 180 ml plant-based milk 
  • 1 tbsp almond paste

Preparation: 

  1. Put oatmeal, chia seeds and your milk alternative in a pot and bring to a boil over medium heat. 
  2. Simmer for about 5 minutes, add the protein powder and stir. Optionally add a little more plant-based milk and top with almond paste.

Protein Pancakes

These pancakes are sure to make any brunch extra special. With this recipe, you’ll not only get the ultimate taste, but also plenty of protein.

Ingredients: 

  • 100 g spelt flour 
  • 20 g protein powder (alternatively more flour) ● 1 tsp baking powder 
  • 150 ml plant-based milk 
  • 1 tbsp. maple syrup / agave syrup 
  • Optional: 1 apple 
  • Some plant-based margarine or oil for frying.

Preparation: 

  1. Put all ingredients in a bowl and stir to make a thick batter. 
  2. Heat some plant-based fat in a frying pan. For the pancakes, pour in 2 tablespoons of batter at a time and cook evenly on both sides.  
  3. Optionally, place an apple slice on top of each pancake, cover with more batter, and then bake until evenly coated.

Peanut Almond Granola 

A heavenly crunchy muesli to put you in a good mood in the morning – or to help you recharge after the Easter egg hunt.

Ingredients: 

  • 250 g rolled oats 
  • 80 g almonds 
  • 20 g peanuts 
  • 120 g agave syrup / maple syrup 
  • 2 tablespoons almond or peanut puree

Preparation: 

  1. Preheat the oven to 160°C. 
  2. Chop the almonds and peanuts. 
  3. Mix all ingredients in a bowl and spread evenly on a baking sheet lined with baking paper. 
  4. Bake for about 20-25 minutes until golden brown, turning in between.
